100% Malbec.

The grapes for Saurus Malbec Barrel Fermented are hand-harvested and transported to the winery in 18kg crates, where they are sorted on a riddling table. The berries are then placed in stainless steel tanks for four days at low temperatures, with alternating moistening and the addition of enzymes and dry ice pellets. Yeast is added to the tanks, and midway through fermentation, on March 14th, the red must is transferred to new oak barrels for fermentation in climate-controlled cellars. Once alcoholic fermentation is complete, malolactic fermentation occurs spontaneously in the same barrels.
The wine is aged for eight months (from March 14th to November 29th) in new barrels made of French (60%) and American (40%) oak. At the request of the Saurus winemaker, the oak barrels are specially toasted for this winery.

Deep burgundy color with very vibrant, intense violet reflections. On the nose, aromas of violets mingle with red and black fruits such as plums, sour cherries, and blueberries. Fermentation in oak barrels imparts a persistent structure on the palate and delicate notes of mocha and white chocolate, making Saurus Barell Fermented a complex and enjoyable wine.
