This wine reflects the personality of its origin. The calcareous soils and cool climate make this Malbec a unique wine. The vineyard is located in the Los Chacayes geographical indication in the Uco Valley and, at 1,500 meters above sea level, is the most extreme vineyard in this geographical indication. Vinification is carried out using 30% whole bunches, the remainder destemmed. The grapes are naturally gravity-fed into small concrete tanks, where fermentation with native yeasts takes place at temperatures between 26°C and 28°C.
The wine is pressed at 28°C. A very gentle process is then carried out to reduce the cap of pomace and achieve a slow extraction. Aging takes place in French oak barrels for a period of 16 months.
