Grapes from the high-altitude vineyards of IG Gualtallary, Valle de Uco, Mendoza, at 1,400 meters above sea level. No herbicides or systemic products are used.

 50% of the grapes are vinified, 50% destemmed. The grapes naturally flow by gravity into small clay amphorae without any additives, where fermentation takes place with native yeasts at temperatures between 16°C and 18°C.
